  • 1 lb (454 g) ground turkey (93% lean)
  • 1/2 cup (60 g) dried breadcrumbs
  • 1/4 cup (40 g) finely diced onion (about 1/2 small onion)
  • 1 clove garlic, minced
  • 1 large egg, lightly beaten
  • 2 tablespoons (30 ml) whole milk
  • 1 teaspoon (5 g) kosher salt
  • 1/2 teaspoon (1 g) freshly ground black pepper
  • 1 teaspoon (1 g) dried thyme
  • 2 tablespoons (8 g) fresh flat-leaf parsley, finely chopped
  • For the glaze:
  • 2 tablespoons (30 ml) ketchup
  • 1 tablespoon (12 g) packed light brown sugar
  • 1 teaspoon (5 ml) Dijon mustard

Instructions

  1. Preheat your oven to 375°F (190°C). Line a small rimmed baking sheet or a 9×5-inch loaf pan with parchment paper, leaving a slight overhang on two sides for easy lifting. Alternatively, shape the loaf directly on the parchment-lined sheet for better browning.
  2. In a large mixing bowl, combine the ground turkey, breadcrumbs, finely diced onion, minced garlic, beaten egg, milk, kosher salt, black pepper, dried thyme, and chopped parsley. Use your hands or a rubber spatula to mix gently until just combined; overmixing can make the meatloaf dense and tough.
  3. Transfer the mixture to the prepared baking sheet or loaf pan. Shape it into a compact, evenly thick loaf about 8×4 inches if on a sheet, or press it gently into the loaf pan. Smooth the top with a spatula for an even surface that will brown uniformly.
  4. Bake the meatloaf uncovered for 30 minutes. During this time, the loaf will begin to set and release some juices; the internal temperature should be rising steadily. Do not open the oven door frequently as that causes temperature fluctuations.
  5. While the meatloaf bakes, prepare the glaze: in a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard until smooth. The glaze should be thick but spreadable; it will caramelize during the final baking stage and add a glossy, sweet-tangy finish.
  6. After 30 minutes, remove the meatloaf from the oven. Brush the entire top and sides with half of the glaze, using a pastry brush or the back of a spoon. Reserve the remaining glaze for a second application.
  7. Return the meatloaf to the oven and continue baking for another 15 to 20 minutes, until the internal temperature reaches 165°F (74°C) when measured with an instant-read thermometer inserted into the center of the loaf. The glaze should be set and lightly caramelized.
  8. Remove the meatloaf from the oven and brush with the remaining glaze for a final glossy coat. Let the meatloaf rest on the pan for 10 minutes before slicing. Resting allows the juices to redistribute, ensuring each slice remains moist rather than crumbling.
  9. To serve, use the parchment overhang to lift the meatloaf onto a cutting board. Slice into 8 even pieces (2 per serving). Arrange on plates and, if desired, spoon any pan juices over the slices for extra flavor.
  10. Store leftovers in an airtight container in the refrigerator for up to 3 days. To freeze, wrap the cooled, unsliced meatloaf tightly in plastic wrap and foil; freeze for up to 3 months. Reheat thawed slices in a 350°F (177°C) oven for 15 minutes, or in the microwave in 30-second bursts until hot.

Notes

Storage: Refrigerate leftover meatloaf in an airtight container for up to 3 days. Freezing: Wrap the cooled, unsliced meatloaf tightly in plastic wrap and then aluminum foil; freeze for up to 3 months. To reheat, thaw overnight in the refrigerator, then place slices on a baking sheet and warm in a preheated 350°F (177°C) oven for 15-20 minutes, or until heated through. The glaze may lose some shine but will still taste delicious.
