Mary Berry Raspberry Parfait

Mary Berry Raspberry Parfait is a frozen or chilled dessert made by combining whipped cream with a sweet egg mixture and fresh raspberries.

Ingredients

  • 300 g fresh raspberries
  • 300 ml double cream
  • 3 large egg yolks
  • 100 g caster sugar
  • 1 tsp vanilla extract

Optional garnish:

  •  Extra raspberries (50 g)
  • Mint leaves

Instructions

  • Prepare the raspberries – Wash the raspberries and lightly crush half of them to release juice.
  • Whisk egg yolks and sugar – In a heatproof bowl, whisk egg yolks and sugar until pale and creamy.
  • Heat gently – Place the bowl over a saucepan of simmering water and whisk until thickened.
  • Cool the mixture – Remove from heat and allow it to cool slightly.
  • Whip the cream – In a separate bowl, whip the cream until soft peaks form.
  • Combine mixtures – Fold the cooled egg mixture into the whipped cream gently.
  • Add raspberries – Fold in the crushed and whole raspberries carefully.
  • Transfer to mould – Spoon the mixture into a loaf tin or serving glasses.
  • Chill or freeze – Place in the freezer for 4–6 hours or refrigerate for a softer set.
  • Serve and garnish – Remove from the tin, slice or scoop, and garnish with fresh raspberries.
