  • 2 cups (480ml) whole milk
  • 1/2 cup (120ml) full-fat Greek yogurt
  • 3 tablespoons (60g) honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • For topping (per serving): 1/4 cup (35g) mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 tablespoon (10g) sliced almonds, toasted if desired
  • 1 teaspoon chia seeds (optional)

Instructions

  1. In a large bowl or 4 individual mason jars or bowls, combine the rolled oats, whole milk, full-fat Greek yogurt, honey, vanilla extract, and kosher salt. Stir thoroughly with a spatula until all the oats are evenly moistened and the mixture is homogeneous — a few small lumps of yogurt are fine and will dissolve overnight.
  2. Divide the mixture evenly among 4 serving containers (each about 3/4 cup of oat mixture). If using a single bowl, note that you’ll portion later. Cover each container tightly with a lid or plastic wrap, ensuring no air gap to prevent a skin from forming.
  3. Place the containers in the refrigerator for at least 6 hours, but preferably overnight (8–12 hours). The oats will absorb the liquid and soften, while the yogurt and milk thicken the mixture into a creamy, pudding-like consistency. Do not leave at room temperature — chilling is essential for food safety and proper texture.
  4. After the soaking period, remove the containers from the fridge. The oats should appear plump and the mixture should no longer be runny; if it seems too thick, stir in 1–2 tablespoons of milk to loosen. Taste and adjust sweetness with a drizzle of honey if desired.
  5. Just before serving, add the toppings: top each portion with 1/4 cup mixed fresh berries, 1 tablespoon sliced almonds, and 1 teaspoon chia seeds (if using). The toppings add freshness, crunch, and omega-3s — stir them in or leave them on top for contrast.
  6. Serve immediately. If you prefer warm oats, microwave each portion uncovered on high for 45–60 seconds, then stir and let rest 30 seconds before adding toppings. Do not reheat with almonds or chia seeds already mixed in, as they can become soggy or burn.
  7. Store leftover undressed overnight oats in the refrigerator in a sealed container for up to 5 days. Do not freeze — the texture of the dairy will break down upon thawing. Add toppings fresh each morning for best results.
