Preheat the oven – Set the oven to 180°C (160°C fan) and line baking trays with parchment.
Cream butter and sugar – Beat the butter and icing sugar together until pale, soft, and fluffy.
Add dry ingredients – Sift in the flour and custard powder, then mix gently until a soft dough forms.
Shape the biscuits – Roll small portions of dough into balls and place them on the trays, leaving space between each.
Flatten gently – Press each ball lightly with a fork to create a classic pattern.
Bake carefully – Bake for 12–15 minutes until just set but not browned.
Cool completely – Leave the biscuits on the tray for a few minutes, then transfer to a wire rack.
Make the buttercream – Beat butter, icing sugar, and vanilla until smooth and creamy.
Sandwich together – Spread or pipe buttercream onto half the biscuits and sandwich with the remaining halves.
