Ingredients

  • Cherry tomatoes – 250 g, halved

  • Cucumber – 1 medium, diced

  • Red onion – 1 small, thinly sliced

  • Black or Kalamata olives – 80 g, pitted

  • Feta cheese – 120 g, cubed or crumbled

  • Extra virgin olive oil – 2 tablespoons

  • Fresh lemon juice – 1 tablespoon

  • Dried oregano – ½ teaspoon

  • Salt – to taste

  • Black pepper – to taste

  • Fresh parsley (optional) – 1 tablespoon, finely chopped

Instructions

  • Prepare the vegetables – Wash and cut tomatoes, cucumber, and onion into even-sized pieces.
