A light and refreshing dip that combines creamy Greek yogurt with fresh herbs and a hint of lemon. Perfect for summer parties or as a healthy snack with crudités. The dip is smooth, tangy, and fragrant with garden herbs.

  • 1 cup full-fat Greek yogurt
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon fresh mint, finely chopped
  • 1 small garlic clove, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Wash and thoroughly dry the fresh parsley, chives, and mint. Damp herbs will make the dip watery. Finely chop all herbs and set aside.
  2. Mince the garlic clove to a paste. For the mildest flavor, remove the green germ in the center of the clove before mincing.
  3. In a medium mixing bowl, combine the full-fat Greek yogurt with the chopped herbs, minced garlic, lemon juice, and olive oil. Use a whisk to blend until smooth and evenly green-flecked.
  4. Add the kosher salt and black pepper. Whisk again, then taste. Adjust salt and lemon juice as desired—the dip should be tangy but not sour.
  5. Cover the bowl with plastic wrap and let the dip rest at room temperature for 10 minutes. This allows the herb flavors to infuse into the yogurt without diluting the texture.
  6. After resting, stir the dip once more. If it has thickened too much, stir in 1 to 2 teaspoons of cold water to reach a dippable consistency. Transfer to a serving bowl.
  7. Serve immediately with crudités such as carrot sticks, cucumber rounds, and bell pepper strips, or with pita chips. The dip can also be refrigerated for later use.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Stir well before serving as some liquid may separate. Do not freeze, as the yogurt will become grainy upon thawing. For a thicker dip, use a yogurt that has been strained overnight through cheesecloth. The dip can also be made a day ahead; the flavors will meld and deepen.
