Mary Berry’s Christmas Red Cabbage is a vibrant, slow-braised dish made with shredded red cabbage cooked gently with apples, onions, warm spices, vinegar, and a hint of sweetness.   • 1 medium red cabbage (shredded)

  • 2 large apples (peeled, cored, chopped)

  • 1 onion (thinly sliced)

  • 50g butter

  • 23 tbsp brown sugar

  • 3 tbsp red wine vinegar

  • 150ml vegetable stock

  • ½ tsp cinnamon

  • ½ tsp mixed spice or nutmeg

  • Salt and black pepper to taste

  • Optional: a handful of dried cranberries for a festive twist

Instructions

Step 1: Prepare the Ingredients

Shred the cabbage thinly, chop the apples, and slice the onion. Keep everything ready for layering.

Step 2: Layer the Cabbage Mixture

Place half the cabbage into your pot. Add half the apples and onions, then sprinkle brown sugar, spices, salt, and pepper. Repeat with the remaining ingredients.

Step 3: Add Liquids and Butter

Pour the vinegar and stock over the layers. Scatter butter cubes across the top to melt as it cooks.

Step 4: Slow-Cook the Cabbage

Cover with a tight-fitting lid and cook on low heat for 1 hour, stirring halfway through.

Step 5: Cook Until Tender and Glossy

Continue cooking for another 20–30 minutes until the cabbage is soft, shiny, and well-braised. Adjust sweetness or acidity if needed.

Step 6: Serve With Christmas Classics

Serve warm alongside roast turkey, gammon, beef, stuffing, and festive sides.
