Christmas cake bites are small portions inspired by traditional British Christmas cake. Instead of baking, the mixture is bound together, shaped into balls, and finished with a coating. Mary Berry–style cake bites focus on balance, using dried fruits, gentle spice, and a soft binding texture that holds its shape while staying moist.
Rich fruit cake (store-bought or homemade) – 300 g, crumbled
Ground almonds – 75 g
Icing sugar – 50 g
Mixed spice – 1 teaspoon
Orange zest – from 1 orange
Orange juice – 2 tablespoons
Apricot jam – 2 tablespoons
Dark chocolate (optional, for coating) – 150 g
Prepare the base – Crumble the fruit cake into fine crumbs in a large bowl, breaking up any large pieces.
Add dry ingredients – Stir in the ground almonds, icing sugar, mixed spice, and orange zest until evenly combined.
Bind the mixture – Add the apricot jam and orange juice, mixing until the mixture comes together and feels soft but not sticky.
Shape the bites – Roll small portions of the mixture into even-sized balls using your hands.
Chill briefly – Place the balls on a lined tray and refrigerate for 15 minutes to firm up.
Coat if desired – Melt the dark chocolate gently and dip each bite, then return to the tray to set.
Set and store – Allow the coating to firm fully before transferring to storage containers.
