Mary Berry Cheese Straws are classic British savoury pastries made by sprinkling grated cheese over rolled puff pastry, then twisting the strips before baking. As they cook, the pastry puffs and crisps while the cheese melts and browns, creating a rich, savoury bite. They are traditionally served as nibbles, party snacks, or elegant accompaniments to drinks.

Ingredients

  • 1 x 320g sheet ready-rolled puff pastry, chilled

  • 100g mature cheddar cheese, finely grated

  • 1 teaspoon English mustard powder

  • A pinch of cayenne pepper (optional)

  • Freshly ground black pepper, to taste

  • 1 egg, beaten (for glazing)

  • Optional: Parmesan or Gruyère for added depth

Instructions

  • Prepare the oven – Preheat the oven to 200°C (400°F) and line a baking tray with parchment.

  • Roll the pastry lightly – Unroll the puff pastry and gently roll it slightly thinner on a floured surface.

  • Glaze the surface – Brush the pastry evenly with beaten egg to help the topping stick.

  • Add cheese and seasoning – Sprinkle grated cheddar evenly over the pastry, followed by mustard powder, pepper, and cayenne if using.

  • Press gently – Lightly press the cheese into the pastry with a rolling pin.

  • Cut into strips – Slice the pastry into long strips about 1.5–2cm wide.

  • Twist each strip – Hold each end and twist gently to form a spiral.

  • Arrange on tray – Place twists onto the lined baking tray, leaving space between them.

  • Bake until golden – Bake for 12–15 minutes, or until puffed and deep golden.

  • Cool before serving – Transfer to a rack to cool and crisp up fully.
