Mary Berry Cheese Nutters are savoury, cheese-based biscuits rolled in crushed nuts before baking. They have a tender, buttery crumb with a lightly crisp exterior, making them a popular choice for festive trays, snacks, and cheese boards.
100g cheddar cheese (finely grated)
75g butter (softened)
100g plain flour
½ tsp mustard powder (optional, for flavour)
Pinch of salt
1–2 tbsp milk (if needed)
50g finely chopped nuts (walnuts, pecans, or mixed nuts)
Cream the softened butter with the grated cheese until well combined and soft.
Stir in the flour, salt, and mustard powder to form a soft dough, adding a splash of milk only if the dough feels dry.
Roll the dough into a firm log about 3–4cm thick, wrapping it tightly in cling film.
Let the dough rest in the fridge for at least 30 minutes to firm up and slice cleanly.
Roll the chilled dough log in the chopped nuts, pressing lightly to help them stick.
Cut the dough into even rounds about 1cm thick and place on a lined baking tray.
Bake at 180°C (350°F) for 12–15 minutes until lightly golden and crisp at the edges.
Let the biscuits cool on a rack so they firm up and develop their perfect texture.
