Mary Berry Cheese Biscuits

Mary Berry Cheese Biscuits recipe

Mary Berry Cheese Biscuits are savoury, buttery crackers made from flour, cheese, butter, and a pinch of seasoning. The dough is rolled out and cut into shapes before baking, resulting in crisp, golden biscuits that are perfect on their own or as part of a snack platter. They require minimal ingredients and bake quickly, making them a staple for easy entertaining.

Ingredients

Scale

  • 100g plain flour

  • 75g cold butter (cubed)

  • 50g mature cheddar cheese (finely grated)

  • 1 egg yolk

  • A pinch of salt

  • A pinch of cayenne pepper or paprika (optional)

Instructions

Step 1: Prepare your baking tray

Line a baking tray with parchment paper so the biscuits bake evenly and release easily.

Step 2: Preheat the oven

Set the oven to 180°C (fan 160°C) to give the biscuits a hot, even bake for crisp edges.

Step 3: Combine flour and butter

Rub the cold butter into the flour using your fingertips until the mixture resembles fine breadcrumbs.

Step 4: Add cheese and seasoning

Mix in the grated cheddar, salt, and cayenne pepper. The cheese should blend well with the flour mixture.

Step 5: Form the dough

Add the egg yolk and combine until the dough comes together. If slightly dry, add 1 teaspoon of cold water.

Step 6: Roll out the dough

Place the dough on a lightly floured surface and roll it to a thickness of about 5mm.

Step 7: Cut the biscuits

Use your favourite biscuit cutters to create shapes—rounds, stars, or squares all work well.

Step 8: Bake the biscuits

Place the shapes onto your prepared tray and bake for 10–12 minutes until golden and crisp.

Step 9: Cool completely

Allow the biscuits to cool on a wire rack before storing or serving. They firm up as they cool.
