100g plain flour
75g cold butter (cubed)
50g mature cheddar cheese (finely grated)
1 egg yolk
A pinch of salt
A pinch of cayenne pepper or paprika (optional)
Line a baking tray with parchment paper so the biscuits bake evenly and release easily.
Set the oven to 180°C (fan 160°C) to give the biscuits a hot, even bake for crisp edges.
Rub the cold butter into the flour using your fingertips until the mixture resembles fine breadcrumbs.
Mix in the grated cheddar, salt, and cayenne pepper. The cheese should blend well with the flour mixture.
Add the egg yolk and combine until the dough comes together. If slightly dry, add 1 teaspoon of cold water.
Place the dough on a lightly floured surface and roll it to a thickness of about 5mm.
Use your favourite biscuit cutters to create shapes—rounds, stars, or squares all work well.
Place the shapes onto your prepared tray and bake for 10–12 minutes until golden and crisp.
Allow the biscuits to cool on a wire rack before storing or serving. They firm up as they cool.
