2 large ripe bananas, mashed
125g self-raising flour
100g caster sugar
75g unsalted butter, melted
1 large egg
½ teaspoon baking powder
½ teaspoon vanilla extract
A pinch of salt
Optional: 50g chocolate chips or chopped nuts
Line the muffin tin with paper cases and preheat your oven to 180°C (160°C fan).
Use a fork to mash the ripe bananas until smooth with small lumps.
Whisk melted butter, egg, vanilla, and mashed bananas together until fully combined.
Fold in the self-raising flour, sugar, salt, and baking powder gently. Avoid overmixing.
Stir through chocolate chips, nuts, or berries if you want a flavour boost.
Spoon or scoop the batter evenly into each muffin case, filling them about ¾ full.
Bake for 18–22 minutes, or until the muffins rise, turn golden, and spring back when touched.
Cool the muffins in the tin for a few minutes before transferring to a rack.
