Mary Berry Banana Muffins

Mary Berry Banana Muffins are simple, home-style muffins made with mashed bananas, flour, sugar, eggs, and butter. They offer a lightly sweet, fruity flavour and a soft crumb that pairs beautifully with tea, coffee, or fresh fruit. They are quick to prepare, easy to customise, and ideal for beginner bakers.

Ingredients

  • 2 large ripe bananas, mashed

  • 125g self-raising flour

  • 100g caster sugar

  • 75g unsalted butter, melted

  • 1 large egg

  • ½ teaspoon baking powder

  • ½ teaspoon vanilla extract

  • A pinch of salt

  • Optional: 50g chocolate chips or chopped nuts

Instructions

Step 1 — Prepare the muffin tin

Line the muffin tin with paper cases and preheat your oven to 180°C (160°C fan).

Step 2 — Mash the bananas

Use a fork to mash the ripe bananas until smooth with small lumps.

Step 3 — Mix wet ingredients

Whisk melted butter, egg, vanilla, and mashed bananas together until fully combined.

Step 4 — Add dry ingredients

Fold in the self-raising flour, sugar, salt, and baking powder gently. Avoid overmixing.

Step 5 — Add extras if desired

Stir through chocolate chips, nuts, or berries if you want a flavour boost.

Step 6 — Fill the muffin cases

Spoon or scoop the batter evenly into each muffin case, filling them about ¾ full.

Step 7 — Bake to perfection

Bake for 18–22 minutes, or until the muffins rise, turn golden, and spring back when touched.

Step 8 — Cool and serve  

Cool the muffins in the tin for a few minutes before transferring to a rack.
