This is a classic British sponge cake made using the all-in-one method, where butter, sugar, eggs, and flour are mixed together in one step. Chopped or sliced apples are folded in or arranged on top, baking gently into the sponge and adding natural moisture and flavour.
Unsalted butter: 175 g, softened
Caster sugar: 175 g
Self-raising flour: 175 g
Eggs: 3 large
Baking powder: 1 teaspoon
Apples: 2 medium, peeled, cored, and thinly sliced or chopped
Milk: 1–2 tablespoons
Ground cinnamon: ½ teaspoon (optional)
Butter: for greasing the tin
Prepare the oven and tin – Preheat the oven to 180°C (160°C fan) and grease and line the cake tin.
Add cake ingredients – Place butter, sugar, flour, eggs, baking powder, and milk into a bowl.
Mix until smooth – Beat everything together until pale, smooth, and well combined.
Add the apples – Fold most of the apples gently into the mixture.
Fill the tin – Spoon the batter into the prepared tin and level the surface.
Top with apples – Arrange the remaining apple slices over the top and sprinkle lightly with cinnamon if using.
Bake gently – Bake for 45–50 minutes until golden and a skewer inserted into the centre comes out clean.
Cool before slicing – Leave to cool in the tin for 10 minutes, then turn out onto a wire rack.
