Mary Berry Apple Traybake is a light and fluffy sponge cake baked in a rectangular tin and enriched with chopped apples that soften beautifully as the cake bakes. It’s easy, reliable, and designed to feed a crowd, making it a classic British family favourite.

  • 25g butter (softened)

  • 225g caster sugar

  • 275g self-raising flour

  • 2 tsp baking powder

  • 4 large eggs

  • 2 tbsp milk

  • 2 large apples (peeled, cored, and chopped)

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon (optional)

  • Demerara sugar (for topping)

Instructions

  • Prepare your tin: Line a traybake pan with parchment for easy removal.

  • Cream butter and sugar: Beat until light and fluffy for maximum rise.

  • Add eggs gradually: Mix one at a time to prevent curdling.

  • Fold in dry ingredients: Add flour and baking powder gently to keep the sponge light.

  • Add milk and vanilla: Mix until smooth and evenly combined.

  • Fold in apples: Add the chopped apples, stirring gently to distribute.

  • Spread into the tin: Smooth the batter evenly with a spatula.

  • Add topping: Sprinkle with cinnamon and demerara sugar for texture.

  • Bake the traybake: Bake at 180°C (350°F) for 35–40 minutes until golden and firm.

  • Check doneness: A skewer inserted in the centre should come out clean.

 

  • Cool fully: Allow the traybake to cool before slicing into squares.
